Cooking lamb koftas in the air fryer is now my favourite way to cook them. These ones are full of spice including smoky Tunisian harissa as well as coriander and cumin. They are full of flavour and perfect as an easy midweek meal. Plus they store and reheat well too.

These harissa lamb koftas are perfect for a weekend fakeaway or an easy midweek meal. They're quick and easy to make and you can prepare a big batch and freeze half for later too if you want to meal prep.
I've served them with flatbreads and salad but you can have them with couscous, rice, potatoes or chips! It's totally up to you.
Ingredient notes for harissa lamb koftas.
To make these harissa lamb koftas you'll need:
- Lamb mince - I used 20% fat mince as the koftas stay really moist and don't dry out if there's a higher fat content. Plus, as they are cooked in the air fryer, a lot of the fat drains out as they are cooking.
- Harissa - Right now I'm using a gorgeous Tunisian harissa (Lamiri harissa) but any harissa will be fine.
- Onion - You can use white, red or brown onions or even shallots as an alternative.
- Garlic - I used freshly crushed garlic but you can use a paste or a powder instead.
- Spices - I add cumin and coriander.
- egg - An egg helps to bind the mixture together and keeps it moist as it cooks.
- Herbs - I used fresh parsley but you can use coriander instead.
How to make air fryer harissa lamb koftas
These koftas are really simple to make. Just mix everything toether with your hands and form into koftas. Let them rest for at least half an hour in the fridge before cooking. You can make them a whole day in advance though.
Place them in the air fryer on the crisper plate and air fryer for 12 minutes at 180C.
Serve with flatbreads and salad.

Can you adapt the recipe?
Yes, I've mentioned a few adaptations already. Feel free to experiment with them. Add some chilli powder if you want them to be hotter or just use more or less harissa paste.
If you don't have fresh herbs they'll still be delicious. You can add dried ones instead. I'd add a teaspoon if using dried.
Can you change the cooking method?
Yes of course. You can shallow fry them in a little oil, grill or bake them. If you want to check if they are cooked, use a meat thermometer and make sure they reach at least 70C. Alternatively cut one of them in half to check there is no pink inside.
Can you make them in advance?
Yes, you can make them up to 24 hours in advance and store them in the fridge. Or you can make and freeze them for up to 3 months. Defrost overnight in the fridge before cooking.
Can you reheat them?
Yes, store any cooked koftas in the fridge for up to three days and then reheat thoroughly in the microwave before eating.
What do eat with harissa lamb koftas?
I love to eat these koftas with flatbreads and salad. You can eat them with couscous, bulgur wheat, rice or any kind of potatoes though. They're great with yogurt and also with spicy chilli sauce.

- 500 g lamb mince mine was 20% fat
- 1 tbsp harissa paste
- 1 teaspoon coriander
- 1 teaspoon cumin
- 1 onion finely diced
- 2 garlic cloves crushed
- 1 tablespoon fresh parsley finely diced
- 1 egg
Instructions
- Mix all the ingredients together really well and form into koftas. Put them in the fridge to rest for at least half an hour.
- Put the koftas in the air fryer and cook them at 180℃ for 12 minutes.
